Roasted chicken and chorizo

This Spanish-inspired recipe is quick, easy… and very yummy!

Serves 4

  • 4 chicken breasts
  • 140g chorizo
  • 1 large red pepper
  • 1 large yellow pepper
  • 3 large baking potatoes
  • 1 large red onion
  • 2 cloves of garlic
  • 2 tbs extra virgin olive oil
  • 1 tbs mixed herbs
  • black pepper

Preheat the oven to 180ºC.

Clean the potatoes and cut into small chunks. Thickly slice the peppers, red onion and chorizo.

Combine the onion and peppers with the chorizo in a large roasting tin along with the olive oil, mixed herbs, black pepper and the 2 garlic cloves. Roast for 12 minutes.

After 12 minutes the glorious, deep red, paprika spiced chorizo oil will be released into the roasting tin. Add the chicken breasts to the roasting tin and coat in the oil. Continue to roast for another 18 mins or until the chicken has cooked through.
