My guacamole

My Guacamole

Everyone has their own favourite version of guacamole, each version having a slight variation to the other. This is my version, it is so easy and delicious. I hope you like it.

  • 2 ripe avocados
  • 2 spring onions
  • 1 medium sized tomato
  • 1 red chilli
  • The juice of 1 lime
  • 20g fresh coriander
  • Salt and Pepper

Halve and peel the avocados, then remove the large stone from the centre (reserving it for later). In a bowl, mash the avocados using a fork (do not over mash as you want to keep the texture quite chunky) then add the lime juice.

Finely slice the spring onions, chilli, tomato and coriander. Add to the avocado and lime juice, then season with salt and pepper to taste. If you like it quite spicy add another chilli.

If you are not serving the guacamole immediately, place the reserved stone into the centre to prevent it from going brown, just make sure you remember to remove it before serving!
