As a result of making my own almond milk, I have an abundance of ground almonds which can be used for many dishes. I used some for my rhubarb crumble recipe a few weeks ago. Never one to waste food, I am frequently putting together recipes from ingredients that I already have in the kitchen.
So these little crumbly biscuits are a result of a me being at home on grey Saturday afternoon and wanting something sweet. A warm bowl of rice pudding with a big dollop of strawberry jam conjures up comfort and nostalgia. From my school dinner days to snuggling up on the sofa with my Mum, it is an absolute, unashamed, comfort food.
I have been trying to find a healthy alternative for some time now. A warm and fuzzy hug in a dish without dairy, refined sugars and processed carbohydrates. I have practised with various flavour combinations, but fig and almond is my favourite. I decided to use quinoa in place of rice as it is full of protein and works as a great carrier for different flavours.

There is such an array of fresh produce here in Nice, and probably the best way to see it is by visiting one of the local markets. One of my favourite favourite things to do is to go to the Marché aux Fleurs, which is in the Cours Saleya in the old Nice.
As the name suggests, the market has many stalls selling colourful bouquets and exotic flowers. But that is not all, as you pass the fragrant flower stalls you will see the friendly fruit and vegetable vendors selling bright coloured Mediterranean vegetables, and perfumed delicious fruit.
On my most recent trip to the market, the peaches caught my eye. They were huge and packed full of flavour. So I brought a large bag and decided to combine them with some French Côte de Provence Rosé. This desert makes a glorious summer time jelly. Continue reading “Rosé and peach agar-agar jelly”
I tend to skip desserts when I eat out, this because I am concerned about eating dairy. When I am at home I have also got out of the habit of enjoying desserts. On a recent trip to the local Asian supermarket, I came across some frozen shredded coconut. Which got me thinking about a potential recipe. Also what a brilliant idea frozen coconut is. All I had to do was leave it to defrost in the fridge overnight and voilà, I had fresh coconut.
I love coconut, I would have it with everything if I could, in desserts and with savoury food. Unfortunately, my partner does not. So this recipe has been created for completely selfish reasons and I plan to eat the whole thing myself. It is a creamy and delicious pudding with all the added benefits of the coconut and the chia seeds.
